This family friendly recipe rises above the ordinary with two super healthy food trends that you should get to know. Our Hemp Crusted Chicken Nuggets are Gluten Free and easy to make while being high in protein, low in carbs, and full of Omega-3 and Omega-6 fatty acids.
Ingredients
2 lbs chicken breast, cut into strips
1 cup brown rice flour
1/2 cup gluten-free bread crumbs, (or whole wheat bread crumbs)
1/2 cup almond meal
3 tbsp hemp seeds
1/2 cup hard goat cheese
1 1/2 tsp sea salt
1 tsp dried thyme
1 tbsp dried basil
3 eggs
Directions
Preheat oven to 350 F.
Trim and cut chicken breasts into strips.
Line a baking pan with parchment paper.
Pour all dry ingredients (except brown rice flour) into a large bowl and mix. In a separate bowl, whisk together eggs.
First dip chicken strips in brown rice flour, then into the whisked eggs and finally into the bread crumb mixture.
Place strips on baking sheet in rows and bake at 350 F for 2025 minutes.
Let cool and serve.
