Dr. Lexi Mikrut, DC shares her recipe for Bruschetta Pasta
“If you’re cooking for your family, bruschetta gluten free pasta is always a crowd pleaser. While your pasta is cooking, sautés olive oil and 1 chopped red onion. Remove from heat and sauté cherry tomatoes for 5 minutes. Remove from heat and top with 1 tablespoon balsamic vinegar, 2 minced garlic cloves, chopped basil and Kalamata olives. Pair with a high quality protein and some leafy greens.”
Pro Tip: Opt for a lentil or chickpea pasta instead of a corn or rice based noodle or even try swapping the gluten-free noodles for zucchini noodles!
